Butternut Squash & Serano / Bacon Soup


Serves 4

Ingredients:

Fry Light
2 medium onions, finely sliced
1 garlic clove, sliced
1 large butternut squash, roughly chopped
100g bacon / Serano jamon (fat removed and chopped)
1 litre chicken stock
125ml 0% fromage Frais
Handful fresh sage leaves

Method:

• Fry the bacon / jamon in a frying pan until crisp/ Add the sage leaves and fry for a minute and then set aside
• Spray a pan with frylight then add the onions, garlic and butternut squash.
• Sweat the vegetables for 10 minutes until softened without browning
• Add the stock then bring to the boil. Cover and simmer for 15-20 minutes until soft
• Blend until smooth, the add the bacon and sage
• Reheat for 5 minutes then stir in the fromage frais. Season and serve
