Mackerel and Cucumber Noodle Stir Fry


Ingredients

Serves: 4
• 280g (10 oz) noodles
• 10 spring onions, sliced
• oil for frying
• 225g (8 oz) smoked mackerel, sliced
• 1 small cucumber, diced
• 1 tablespoon soy sauce
• 1 tablespoon lemon juice
• 2 teaspoons poppy seeds
• salt and black pepper to taste

Method

1. Boil noodles according to packet instructions in a large saucepan with salted water. Drain and run under cold water.
2. Stir fry spring onions in oil for 2 minutes. Add noodles, mackerel and cucumber, and fry for 3 minutes.
3. Add remaining ingredients and cook for 3 minutes.
